Umami Burger: Inside the burger chain’s new restaurant in Greenwich Village.

“Umami” is the Japanese word for savory taste sensation, and that is precisely what one will get at Umami Burger (one of 20 restaurants in California, Florida, and New York) in Greenwich Village. The featured, highly demanded burger consists of a succulent, top-grade patty that is usually cooked to medium-rare on a plancha grill, complemented by a slightly sweet and lightly toasted Portuguese bun. They offer various mouthwatering toppings such as, bacon lardons, onion strings laced with smoked salt, roasted Hatch chile peppers, roasted tomato, truffle cheese/glaze, wasabi flakes and caramelized onions. This burger is not complete until it’s infused with the mysterious “Umami Master Sauce,” garnished with “Umami Dust,” and the signature “U” that’s branded onto each burger.
