BBQ Pulled Chicken

Craving a more hearty meal or those days you just want some comfort food

This recipe satisfies that craving without the guilt

And left overs can be saved to make a sandwich the next day

Great on top of a bed of quinoa with some sauté veggies

  • 2 chicken breasts
  • 1 pear diced
  • 2 tomato diced
  • 1 onion diced
  • 1 carrot diced
  • 1/4 cup honey
  • 1/3 apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 8 cups water

Taking a large pot or casserole dish, or large pan

Place all the ingredients into the pan/pot making sure everything is submerged under the liquid, cover it

Place this in the oven for 2 hours at 350 F

Slow cooking it will ensure the meat is juicy and tender

The chicken will fall apart into strands

The liquids become a sauce and the vegetables and fruit get dissolved into the meat

The sauce complements mashed cauliflower (a better option over mashed potatoes)

 

Pan Seared Beef cubes on a bed of Quinoa

 

The beef is lightly seasoned with sea salt and pepper, enhancing the natural taste of the beef

The beef is seared with tomato and onion

The sweetness from the tomatoes create a great complimentary sauce on top of the quinoa

Quinoa is a great substitute for rice and pasta

It is a carb that contains protein

Or even a snack during the day

Its got a smooth soft texture with a nice bite/ crunch from the nuts

Its aromatic with hint of cinnamon and nutmeg with the sweetness of the bananas

 

 

Marinated Beef with Pickled Carrots

Banana chocolate Chip Muffins

Banana Chocolate Chip Muffins are great for a quick breakfast when made ahead of time

They also go great as a snack

The sweetness from the bananas, and the aroma from the cinnamon they brighten up the morning

This beats any plain bagel or toast

Simple and easy

  • 3 bananas
  • 2 cups oat flour
  • 1/3 cup coconut oil
  • 1 egg
  • 1/2 cup semi sweet chocolate chips
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • (optional) 1/2 cup almonds, walnuts, pecans\

Mash bananas with coconut oil and beat in egg. Sift flour, cinnamon, baking powder and baking soda. Stir in flour mixture into the banana mixture. Fold chocolate chips and nuts.

Grease muffin pan or line them with cup liners

Pour mixture about 2/3 full in the pan.

Bake for 25-30 mins at 350 degrees F

When a toothpick comes out clean from the center they should be done

Makes 6 muffins
