Mexican Toast

Ingredient

1 tbl spoon of olive oil/ vegetable oil

2 slice of whole wheat bread

1 Avocado (peeled)

4 ounces of chopped onions,

4 ounces of chopped cilantro

4 ounces of jalapeño

2 eggs

step 1:

In a small bowl, add the peeled avocado, along with 2 ounces of onions, peppers and jalapeño with cilantro and pinch of salt, a pinch of black pepper and 1/8 of lime juice. Mix it together to create a guacamole.

step 2:

Ina a small bowl, add the rest of the 2 ounce of chopped onions, 2 ounce of chopped cilantro and 2 ounce of jalapeño with a pinch of salt and black pepper, 1/8 lime to make a pico de gallo.

In a medium frying pan, add 1 tbl spoon of vegetable oil/olive oil and then drop 2 eggs any style. (fried preferred)

step 3:

place the 2 whole wheat slice bread in a toaster and let it toast.

step 4:

Once the bread is toasted, place the 2 slice whole wheat bread on a plate, add a spread of guacamole on each toast, add the fried eggs on top of the Guacamole and then add the pico de gallo top to have a perfect Mexican Toast.
