The Unstuffy Taco

Coming from avid food fanatics, the Taco is a herald in the Mexican Culinary cuisine. Nothing Mexican is as mainstream and edible as the Taco. We’ve all had soggy, overstuffed soft shell Tacos that leave much to be desired, and often dismissed the less ornate and traditional tortilla and “a bit of salsa or crema”. We often dismiss meats and flours and instead pursue that which is advertised as stuffed and filling, but this article reminds us of what truly remains Mexican. After watered down and paradoxically filled tacos we arrive at it’s genuine form, flours meats and a bit of spice.
