Many Americans want a variety of flavors in their food palate now but want it healthier at the same time. With more health conscious Americans comes a desire of lowfat and low-salt food items and ethnic cuisines that have this yet still acquire a mixture of flavors and spices have sparked a growing interest in these individuals who care about health. Who wants to eat bland and healthy? In the early 2000s, according to People for the Ethical Treatment of Animals found in a poll that 24% of those people are influenced by Italian foods, 17% ate Chinese, and 18% enjoyed Indian and Mexican foods. This poll was more catered to vegetarians. These numbers have most likely changed for the better today especially with all those other factors in the rise of ethnic foods.
